Pancakes with edible black locust flowers

The black locust is sometimes referred to as the white locust tree or the acacia tree. It blooms from mid-May to mid-June and delights with white flowers gathered in long, hanging clusters. Apart from beautiful and fragrant inflorescences, decorative leaves also deserve attention.

The black locust is a poisonous plant. Toxic properties are shown by leaves, bark, seeds... but not flowers .

The flowers are edible, have a sweet and honey flavor. They can be used to make syrups, tinctures, preserves, and add to salads, cakes and desserts. Due to the possibility of allergies in sensitive people, it is safer to use only flakes, without stamens. *



  • 250 g oat flour
  • 350 ml kefir (can be buttermilk, yogurt or milk)
  • 25 g sugar
  • 2 eggs
  • 30 ml of oil
  • pinch of salt


  • about 30 g of acacia flowers (petals) detached from the stalks
  • skin rubbed with 1/2 lemon
  • frying oil
  • to serve - powdered sugar, honey, maple syrup or whipped cream


Put all the ingredients for the dough into a mixer and beat until fluffy. Then add the acacia flowers and the grated lemon peel, mix with a spoon. Fry in a little oil in a hot frying pan on both sides until golden brown. After frying, put it on a plate lined with a paper towel to drain. Serve sprinkled with powdered sugar or with other additives.
