Easter salad in jars, plates or in a bowl

A salad of potatoes and eggs with yoghurt-mayonnaise sauce, onion and marinated bay boletes is my suggestion for a delicious Easter dish. It is very easy to make and we can serve it in different ways.

It looks beautiful when spread on plates with a large portion of lamb's lettuce. It is also a great idea to prepare the salad in individual portions in jars. I recommend jars of pickled boletes with a decorative wooden lid. *


  • 500 g of salad potatoes
  • 5 - 6 eggs
  • 1 red onion
  • 150 g of pickled mushrooms - for me it's boletes Forest Treasures
  • 3 tablespoons of mayonnaise
  • 4 tablespoons of thick natural yoghurt
  • teaspoon lemon juice
  • salt
  • pepper
  • spoon of chopped herbs - dill, chives

    Boil the potatoes in their jackets, i.e. unpeeled. Before cooking, it is enough to wash and scrub them well. For me, steamed is the best. Cool the boiled potatoes and remove the skin with a small knife. We cut into thin slices.

    Hard-boil the eggs (8-10 minutes), after boiling, pour cold water over them, cool them down and peel them. We cut into slices, preferably with an egg slicer.

    Cut the peeled onion in half and dice it into small cubes or feathers. Drain the mushrooms from the brine and cut them into thin strips. Leave some of the nicer boletes whole for decoration.

    We prepare the sauce. In a bowl, mix mayonnaise with yogurt, add lemon juice, salt, pepper and mix. Finally, add chopped herbs and chopped boletes, gently mix them, try and season if necessary.

    We can serve the salad in three ways:

    1. Put alternately slices of potatoes and eggs in a large bowl, season with salt and pepper and put some of the sauce. How many layers there will be depends on the size and shape of the bowl, it is important that the sauce is distributed in proportion to the ingredients and that the last layer is the sauce. Before serving on the table, decorate the bowl with fresh greens, e.g. lamb's lettuce, whole mushrooms, egg, etc.

    2. Put all the ingredients of the salad in layers, just like in a bowl, in jars or glasses. Close the jars and put them in the fridge. Before serving, we decorate the lamb's lettuce and whole mushrooms and each guest gets their own portion.

    3. On a large platter or several smaller plates. I like this form very much because we can give a lot of greens with the ingredients of the salad, in this case lamb's lettuce. Keep the potatoes and eggs tightly closed in glass containers in the refrigerator, and the sauce in a jar. Before serving, spread the slices of potatoes and eggs on the plates, cover generously with the lamb's lettuce, add the whole mushrooms, and serve the sauce in the bowl next to it.
