Vietnamese coconut pancakes with cabbage, carrot, avocado and herb salad
Colorful, delicious and quick to prepare vegetarian dish. Golden, aromatic and crispy pancakes are served with a salad of cabbage, carrots, avocados and herbs. Season it with spicy sauce. It is a real explosion of flavors and aromas, a feast and delight for the palate.

Ingredients
PANCAKES
220 g of rice flour
5 g of salt
1/2 teaspoon ground turmeric
1 egg
400 ml of coconut milk
175 ml of water
EXTRAS
200 g of red cabbage
2 carrots
2 - 3 balloons
fresh herbs - mint leaves, coriander, basil
avocado + lime juice
frying oil
SOS
5 tablespoons of lime juice
3 teaspoons of sugar
1.5 tablespoons of soy sauce
1 fresh chili pepper
2 cloves of garlic
Execution
In a bowl, mix rice flour, salt, turmeric and egg. Add coconut milk and water, beat until smooth. Cover the bowl and set aside.
Chop the cabbage, peel the carrot and cut it into diagonal slices, then into thin strips. Chop the spring onions and leaves. Gently mix the cabbage, carrots, spring onions and herbs in a bowl.
We prepare the sauce. In a small bowl, mix the lime juice, sugar, soy sauce, finely chopped chili and garlic. Pour 2/3 of the sauce over the vegetables and mix gently.
We fry pancakes. Spread half a teaspoon of oil over the entire (small) pan and heat it over medium heat. When the pan is very hot, pour in a ladle of dough and rotate the pan and spread it over the entire surface. We want thin, holey pancakes, so you need to feel how much dough should be poured into the pans. I think after the first try it will be known. Fry the pancake until golden and crispy. We can only fry the pancake on one side, I just turn it over for a moment to be sure. Put the finished pancake on a plate and fry the next ones.
Put a portion of salad on the pancake and slices of avocado sprinkled with lime juice, as many as you like. Next to it, in a small bowl, serve a portion of the dipping sauce.
