Shortbread cookies with cornstarch and butterscotch. How to make homemade fudge mass, i.e. butterscotch or dulce de leche
Alfajores are South American very shortbread cookies. This sweet dessert is made of two round cookies layered with dulce de leche, i.e. butterscotch mass. We can powder the finished cookies with powdered sugar or coat their sides in coconut shavings.

The cakes are very delicious, but also very sweet. They taste great when served with tea, coffee or a glass of good wine.
Alfajores dough is prepared, among others, from corn starch, which can be replaced with potato starch or corn flour.
Kajmakowa mass can be bought ready-made in a can or we can prepare it ourselves from milk, sugar and a pinch of soda.
How to prepare dulce de leche, or butterscotch at home? In a thick-bottomed pot, mix 1 liter of milk, 250 g of sugar and 1/2 teaspoon of baking soda. Bring to a boil, then reduce the heat and simmer for 2 - 3 hours until the mass thickens and becomes caramel colored. At the beginning, make sure that the milk does not boil over and stir it from time to time. Stir more often at the end of cooking to avoid overcooking.
INGREDIENTS
- 180 g of corn starch
- 120 g of fine flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- pinch of salt
- 150 g of softened butter
- 100 g of powdered sugar
- 2 yolks
- grated zest of 1 lemon li
- 200 g of butterscotch mass, i.e. dulce de leche
- optional coconut shavings to coat the biscuits
PERFORMANCE
- In a bowl, mix flour, cornstarch, salt, baking powder, baking soda and grated lemon zest.
- To the second bowl or the bowl of a food processor, add soft butter and sugar.
- Grind the butter and sugar until it is fluffy.
- Add the yolks to the butter mass and mix until combined.
- Add the dry mixture of flour and add additives and mix at slow speed until the ingredients combine.
- Put the dough on the dough, knead it briefly by hand and form a ball, flatten it, wrap it in cling film and cool it in the fridge for about an hour.
- Heat the oven to 180 ° C.
- Roll out the dough on a floured board to a thickness of about 3 mm. Li
- Using a cookie cutter with a diameter of about 5 cm, cut out circles.
- Put the cut cakes on a baking sheet lined with baking paper and put them into the heated In the oven.
- Form the excess dough into a ball again, flatten it and cool it down briefly before preparing the next portion.
- Bake the cookies for about 8-10 minutes, turning the pan halfway through cooking. li
- Cool the baked cookies on a wire rack.
- Place the cooled cookies with butterscotch mass and, optionally, coat the edges in coconut shavings.
