Too many questions... we can make eggplant rolls before we find the answers.
Grilled eggplant rolls are an idea for a quick snack.
We can also fry the aubergines in a conventional pan.
The amount of mayonnaise in a recipe depends on the juiciness of the tuna and the consistency you get after crushing the chickpeas.
Ingredients
1 eggplant
1 can of tuna in own sauce - about 160 g
1 can of chickpeas - 265 g after the pickle was drained
1 shallot, finely chopped
1/2 diced red pepper
1-2 tablespoons of mayonnaise
a handful of chopped fresh basil
salt, pepper
eggplant oil
Execution
Cut the eggplant into thin oblong slices, sprinkle with salt and set aside.
Crush the drained chickpeas with a fork, add drained tuna, chopped shallots, basil, paprika and mayonnaise. We mix and season to taste.
Dry the eggplant slices with a paper towel, brush with olive oil and grill on a hot grill pan. Put it on a plate, cool it down and smear each slice with the prepared tuna stuffing. Wrap gently, not too tight, and fasten with a toothpick.
The whole can be additionally sprinkled with olive oil, balsamic vinegar, salt, pepper or basil leaves.
