Phở is a famous Vietnamese rice noodle soup, and its name is known all over the world. This very diverse soup has become a cult dish, not only in Vietnam. It tastes great with both beef and chicken, and also in a vegetarian or vegan version.

In the original phở gà recipe, whole chicken is cooked to make a rich broth. For those who are in a hurry, I recommend preparing the broth in advance and, for example, freezing it. We can also prepare a large pot of broth and use it to prepare another soup for 2-3 days.

You can buy most of the products in every store, but I recommend looking for rice noodles or fish sauce in larger stores or ordering them online, e.g. at World cuisines < / a>

Ingredients per serving for 4

  • 2 l chicken stock
  • 2 shallots
  • 1 thumb-sized piece of ginger, approx. 15 g
  • 1-2 chicken breast fillets < / li>
  • 200 g M size rice noodles
  • 1 spring onion
  • a few sprigs of coriander
  • a piece of fresh chili pepper
  • 1 / 2 limes
  • fish sauce to serve
  • freshly mashed or ground pepper


  1. Bring the broth to the boil and then reduce the heat until the broth is slowly cooking. Cut the shallots and ginger lengthwise in half, without peeling, and fry for a while in a dry frying pan. Add to the broth.
  2. Add the chicken breasts to the broth and cook over very low heat for about 10 minutes. We take the meat out of the broth and cover it with cling film. Cover the broth with a lid and cook for another 20 minutes over low heat. Then strain it through a sieve and let it cool down.
  3. While the broth is boiling, pour lukewarm water in a bowl and soak for 20 minutes. Then boil water in a pot and add the drained pasta for 30 seconds. Drain, rinse with hot water, drain and divide into heated soup bowls.
  4. Cut the chicken breast into thin slices across the grain and spread over the pasta. Noodle bowl filling with hot broth. Sprinkle with chopped coriander, spring onions and chili. Serve with lime wedges, fish sauce and pepper for seasoning.
