Fluffy blueberry cheesecake baked on a gluten-free cornflakes and chocolate base

Corn flakes are a great cheesecake base, especially for people who do not tolerate or consume gluten. But regular cereal would be a bit boring, so I mixed it with dark chocolate to spice it up. I put some on the bottom of the cheesecake, and some I put on top after baking, thanks to which the cheesecake gained a delicious and crunchy addition.

A fluffy, delicate blueberry cheesecake with a base of corn flakes is a very easy, quick and delicious dessert. To make the cheesecake velvety and delicate, I add mascarpone cheese to the three times ground curd. We can make the task easier and use ready-made cottage cheese from a bucket with the addition of mascarpone cheese.

INGREDIENTS for a plate measuring 30 x 22 cm


  • 100 g corn flakes
  • 100 g dark chocolate 70%


  • 3 eggs
  • 250 g blueberries
  • 80 g sugar (20 g for egg white, 60 g for cheese)
  • 500 g cottage cheese cheesecake with mascarpone (or 300 g cottage cheese and 200 g mascarpone)
  • juice from 1/2 lemon
  • 20 g vanilla pudding powder



  1. Chop the chocolate and melt it in a bowl in a water bath, remove it from the burner.
  2. Add corn flakes to the melted hot chocolate, mix it and put the layer on baking paper.
  3. Set aside until the chocolate flakes have cooled down.


  1. Separate the egg yolks from the egg whites.
  2. Beat the egg whites until stiff with 20 g of sugar.
  3. In the second bowl, mix the yolks with 60 g of sugar, lemon juice, add the cheese and pudding powder.
  4. Gently crush (divide) half of the corn flakes covered with chocolate to the bottom of the plate lined with baking. Put the rest of the flakes for later.
  5. Add the beaten egg whites and 200 g of blueberries to the cheese mass and mix it very gently.
  6. Pour all over the corn flakes and bake in an oven preheated to 160 ° C for about 1 hour.
  7. Let cool in the oven slightly slightly open.
  8. After cooling the cheesecake, put the remaining cornflakes and blueberries on top.
