Delicate and crispy butter biscuits with a mix of rooibos, orange, vanilla and honey
Do you like to enjoy a crunchy buttery cookie with a cup of hot rooibos tea? If so, I recommend a recipe for exceptionally delicate, aromatic and easy-to-prepare cookies.

Sweet, crispy slices with rooibos, oranges and chocolate. Cookies to be prepared in the blink of an eye, without cutting out with molds, without rolling. These delightful discs are also a great idea for a small sweet gift. They will look elegant, for example packed in a festively decorated jar.
Ingredients
170 g of butter
130 g of sugar
1 egg
270 g flour type 500
a pinch of salt
2 teaspoons of Rooibos tea (for me a mixture of rooibos, orange, vanilla and honey)
20 ml of orange juice (may be omitted)
Candied orange peel - 50 g for dough, 50 g for decoration
100 g of dark chocolate

Execution
In the bowl of a blender, beat the butter and powdered sugar into cream. Stir in the egg, optionally orange juice and beat for a while.
In a separate bowl, mix the flour, Rooibos tea and salt. Add the candied orange peel and mix.
We add the dry ingredients to the butter cream and mash it slowly until the ingredients combine. The finished dough should be thick but sticky.
Place the dough on a lightly floured board, divide it into two portions. Form a roll with a diameter of about 5 - 6 cm from each portion and wrap it tightly in cling film. Cool in the fridge for about 2 hours, preferably overnight.

Preheat the oven to 180 ° C. When the oven heats up, take the first portion of the dough out of the refrigerator and use a sharp knife to cut it into slices about 0.5 cm thick. Place the dough rings at intervals on a baking sheet lined with baking paper. Bake the cookies for about 15-20 minutes or until they turn golden around the edges. Once baked, let it cool on a wire rack. Then bake the second portion.
Dissolve the chocolate in a water bath and dip one edge of the cooled cake in it. Immediately decorate the chocolate part with candied orange peel and / or sprinkles, nuts, shavings or sesame seeds. We put it on paper until the chocolate solidifies. Cookies taste best with freshly brewed rooibos tea.
