Lazy poppy seed dumplings with green beans and fried crispy onion
Lazy dumplings with poppy seeds, green beans and crispy fried shallots. We can also enjoy this delicious dish in autumn and winter. It is enough to replace the beans with other vegetables, e.g. broccoli or cauliflower. Ricotta can be replaced with semi-fat cottage cheese or with smoked cottage cheese to enhance the flavor.
100 g ricotta cheese
75 g of flour
a handful of chopped dill or young nasturtium leaves in season
200 g of green beans
70 ml of oil
2 shallots, cut into thin rings
1 tablespoon of flour
2 tablespoons of clarified butter
1 tablespoon of poppy seeds
In a bowl, mash the ricotta cheese with a fork, mixing with the egg. Add the flour and mix until the ingredients are combined. We put the dough on a floured board. Knead gently until smooth and elastic, add flour if necessary. Cover with a cloth and leave the dough to rest.
Boil the prepared beans according to your preferences - to make them crispy, put them in boiling water for 2 minutes. If you prefer a softer one, remove it after at least 4 minutes. Strain in a colander and set aside.
Pour 70 ml of oil into the pan and heat it up over low heat. Just before frying, coat the shallot rings in the salt flour, shake off the excess and add to the hot oil. Fry until the shallots are golden brown. Not too long for it not to take on a bitter taste. Drain on a paper towel.
Form a roll about 25 cm long from the dough and cut it into pieces. Boil water in a large pot and lightly salt it. Put the lazy ones in batches and cook for 2-3 minutes, until they come to the surface. Drain in a colander.
In a large frying pan, melt the clarified butter over medium heat. Add the noodles, sprinkle with poppy seeds and fry for a few minutes, stirring, until golden brown. Add the beans and mix it gently.
We serve lazy ones with beans, fried shallots, pepper and dill or nasturtium leaves.
