Lime cheesecake with oreo and white chocolate topping
Cheesecake is a cake or a dessert (opinions are divided), with which - keeping to the right proportions - we can freely experiment. This recipe was created ad hoc from products that happened to be at home .
Curd and mascarpone combined with lime, on the base of cookies (this time with oreo) and with a white chocolate topping... this is delicious! Cheesecake for Easter, cheesecake for Christmas, cheesecake every day and on holidays.
- 330 g of shortbread cookies (e.g. oreo)
- 50 g of butter < / ul>
- 200 g sugar
- 2 packs of vanilla pudding (sugar free)
- 4 eggs
- 800 g ground semi-skimmed curd
- 500 g mascarpone cheese
- grated skin and 3 lime juice
- 100 g of white chocolate
- 1 tablespoon of plain yogurt
- 1 tablespoon of lime juice
- 1 lime peel
- 2 cubes of dark chocolate
Line a cake tin with a diameter of 26 cm with baking paper.
Mix cookies with butter until wet sand, line the bottom of the springform pan, put in the fridge for about 1 hour.
Mix all the ingredients for the cheese mass until homogenous.
Heat the oven to 180 ° C, top and bottom.
Pour the cheese mass into a springform pan on the bottom of the cookies. Put it in a hot oven and bake it for about 1 hour.
When the cheesecake is baked, cool it down in the oven slightly open, and then cool it in the fridge.
Dissolve the white chocolate in a water bath, add natural yoghurt, juice and half of the lime zest.
Top the glaze over the cooled cheesecake and sprinkle the remaining grated lime zest on top.
When the glaze cools down, grind the dark chocolate on top. p>
