Dragon fruit salad with caramelized cashews

Pitaya (Pitahaya) is an exotic fruit also known as dragon fruit or strawberry pear. It is the fruit of several species of cactus, it is native to Mexico and Central America, and is now also grown in Asia.

The red pitaya variety is one of the nicer fruits, especially when cut :-) The taste of the flesh may disappoint, however, because it is very delicate, practically bland, and therefore not many amateurs.

There is a solution to this! This fruit is full of tiny seeds, which together with the sweet mango mousse and refreshing pink grapefruit can take us on an exotic journey :-)


Ingredients

FRUIT

1 mango mousse

1 piece pink grapefruit - fillets

1 piece of dragon fruit - pitaya

CARAMELIZED CASE NUTS

50g of sugar

100g cashews

1 tablespoon of water

1 tablespoon of coconut oil

Execution

Dissolve sugar in a pan with water and a tablespoon of coconut oil over low heat, bring to a boil. When we get a light caramel color, add the nuts, mix the nuts to cover with caramel, place them on baking paper and cool.

Cut the pitaya fruit in half lengthwise and gently trim the flesh with a teaspoon so as not to damage the skin. A special spoon for cutting fruit balls works well :-) We fill with mango mousse, pitaya balls and grapefruit fillets. Sprinkle with caramelized nuts, decorate with a mint leaf, eat immediately !!!
