Salad from white cabbage is the easiest and quick to prepare addition to main dishes. I propose for a change this time a cabbage salad with the addition of dried apricots, red onions and with a sauce with a slightly oriental note.

This  salad is  refreshing, crunchy and, above all, tasty. I like to prepare a little more of it, because it is just as delicious the next day.

1/4 head of cabbage about 500 g

100 g of dried apricots

1 red onion

10 - 15 g fresh ginger

1/2 teaspoon ground romaine cumin

1/2 teaspoon sambal oelek or chili sauce

4 tbsp olive oil

1 teaspoon cane sugar

2 - 3 tablespoons of white wine vinegar

a bunch of chives

Prepare the sauce. Grate the peeled ginger on a fine-mesh grater. To the grated ginger add Roman cumin, sugar, white wine vinegar, olive oil,  chili sauce or sambal oelek, mix and season with salt.

We clean the cabbage and shred it very thinly. Cut the apricots into strips, the peeled onions into feathers.

We mix the chopped cabbage, apricots and onions with the sauce, taste, season with salt if necessary. Sprinkle the whole thing with chopped, chives.
