A glass of homemade walnut liqueur after a hearty dinner is the perfect finishing touch to your meal. This tincture is a panacea for digestive and metabolism problems. For adults only of course!

To prepare the tincture, we need unripe nuts that can be easily cut with a knife. When cutting nuts, remember to use gloves, because nut juice makes your hands very dirty. The best time to harvest the nuts is the end of June, the beginning of July.

After filtering the tincture is not very tasty and we can get discouraged by it.
This was our case... disgusted, we put the tincture in the dark corner and forgot about it for a long time. And fortunately, because patience or "forgetfulness" has a huge influence on the taste! This tincture is supposed to serve us healing, but it would be nice if it also tasted, and this requires a long maturation...



  • 1 kg of green walnuts
  • 1 l of 70% alcohol
  • cinnamon stick
  • 1cm ginger
  • anise star
  • 5 cloves
  • a pinch of cardamom (or a whole pod)
  • 1/2 lemon


  • 750 ml dry red wine
  • 350 g sugar



  1. Cut the nuts in half or smaller, arrange them in a jar.
  2. Add spices and lemon slices, pour alcohol over them.
  3. We close the jar and put it aside for 40 days in a sunny place, preferably on the windowsill.
  4. Tune likes to be shaken frequently, even every day.


  1. After 40 days, prepare sugar syrup on the wine.
  2. Heat 300 ml of wine (do not boil it!), add sugar and mix.
  3. When the sugar has melted, let it cool down by adding the remaining wine.
  4. Add the cooled wine-sugar syrup to the walnut infusion and set aside for two weeks, remembering to shake it.
  5. After this time, filter the tincture, pour it into bottles and leave it for... at least half a year, the longer the better.
