Shrimps, tomatoes, spinach, avocado and green avocado sauce - delicious and colorful salad
Dinner for two? Spinach salad with fried prawns and a delicious creamy avocado sauce is the perfect dish for such a dinner.

All ingredients can be prepared in advance, and just before dinner, light the candles, pour the white wine and fry the prawns. It is a very tasty and exquisite salad, and at the same time very easy and quick to prepare.
If you like shrimp, I also recommend a simple and exquisite recipe salad with prawns, fennel and oranges.
Ingredients
AVOCADO SOS
1 avocado
1 teaspoon of mustard
1 tablespoon of lemon juice
2 tablespoons of natural yoghurt
1/2 teaspoon of honey
1 tablespoon of chopped parsley
salt
pepper
SALAD
300 g of prawns (without heads)
100 g fresh baby spinach leaves
100 g of cherry tomatoes
1 little mango
1 - 2 cloves of garlic
1-2 tablespoons of olive oil
a bunch of chives
Execution
AVOCADO SOS
Mix the avocado flesh and the remaining ingredients for the sauce, Season with salt and pepper.
SALAD
Rinse and dry the spinach. Wash the tomatoes, dry them and cut in half. Peel the mango, cut out the flesh and cut into thin ones slices. Chop the chives.
On two plates we spread spinach leaves, tomatoes and mango slices.
Peel the shrimps from the shells and, if necessary, remove them intestine (black "thread" along the dorsal part). We peel the garlic and we cut it into very thin slices. Heat the fat in a frying pan and Roast garlic slices very briefly on it. Remove the garlic from the pan and put it on paper towel. In the remaining fat, fry the prawns over medium heat for about 4 - 5 minutes in half the time turning them. Season with salt and pepper and put on the salad. Sprinkle with chopped chives, roasted garlic and serve with avocado sauce.
