Colorful salad with figs, kaki and green pumpkin seed oil sauce

Pumpkin seed oil, apart from its characteristic flavor, colors the sauce green. We can also prepare this oil with green cheese paste .
3 handfuls of green leaves - mixed salad, in my case: arugula, spinach, kale, mangold
2 fresh figs
1 kaki fruit (persimmon)
1 small shallot
1 tablespoon of pumpkin seeds
100 g of goat cheese salad
1 tablespoon of mayonnaise
1 tablespoon of lime or lemon juice
1 tablespoon of natural yoghurt
1 tablespoon of pumpkin seed oil
GREEN SAUCE WITH PUMPKIN SEED OIL
Mix the mayonnaise, lime juice, yogurt and pumpkin seed oil with a fork or a small stick until you get a uniform sauce. Season with salt and pepper to taste and set aside in the fridge.
SALAD WITH FRUIT AND GOAT CHEESE
We spread the washed and dried leaves on a dish. Add fresh figs cut into quarters. Peel the kaki fruit, cut it in half, then into slices, and add it to the salad. We also add the shallots, peeled and sliced. Finally, sprinkle with crushed goat cheese or feta cheese and pumpkin seeds. Serve the salad with a green sauce.
