Ice tea, cold brew or ice brew shinobi cha? Which cold tea to choose and how to prepare it? I suggest all of them, let's start with ice tea.


Preparing ice tea is very simple, and the homemade version is much healthier and tastier than the store-bought one. In commercially available ice tea, unfortunately, we will find only a delicate tea flavor and a lot of sugar and citric acid. Beat the summer heat and prepare a large jug of ice tea in just a few steps.

Homemade iced tea, how to make ice tea?


  • 2 - 3 teaspoons of your favorite black tea
  • 2 lemons or limes
  • several sprigs of mint
  • a cup or two of ice cubes
  • honey or other sweetener to taste
  • still water, filtered tap water can be used


  1. In a teapot, pour a small amount of boiling water over your favorite tea. We brew it for 3 - 4 minutes.
  2. If we sweeten the drink, dissolve the honey in a small amount of warm water.
  3. Fill the jug with slices of lemon or lime, mint, melted honey and ice.
  4. Drain the cooled tea and pour the essence into the jug, top up with cold water.

The cold brew process is commonly referred to as "cold brewing" tea. It is actually maceration of tea. For such a cold "brewing" we need twice as much leaves as we would use for hot tea. All teas - black, green and white with additives or flavored - will work here.

In cold brew we use water at room temperature or even cold. We give 10 - 15 g of tea per liter of water.

On the market you will find special bottles with a filter designed to prepare cold brew tea. Such a bottle facilitates the preparation of tea, but it is not necessary. In fact, any jug or bottle of water is enough. The finished drink is enough to pour through a sieve into another container and drink.

How to prepare cold brew tea?

Minimum 10 g of tea per liter of water leave in or out of the fridge for 2 hours. We can give more leaves and leave them in the water for a shorter time or vice versa. I recommend to pour the leaves overnight to have a cold and refreshing tea drink ready the next day. Let's add to the ready cold brew lemon, honey, mint, summer refreshment guaranteed!


Shinobi - cha (pronounced sinobi ća) is one of the traditional ways of preparing tea of ​​the best grades in Japan. Teas such as qyokuro or kabuse cha, which are rich in amino acids, are most often used for this. Shinobi - cha is a method that requires a lot of time and patience because we prepare tea with ice.

How to prepare shinobi - cha tea?

Pour the appropriate portion of Japanese green tea into a small teapot - about 5 g per 100 ml of water. We fill the teapot with ice cubes up to the lid and cover it and... wait. When the ice melts, pour the tea into a cup and start savoring the essence of umami.

We don't throw away tea leaves. We pour them with water at a temperature of 60 ° C for 30 seconds. We can make a few more brews, successively extending their duration.
