Tincture of forest blueberries, blueberry with spices
Forest blueberries, i.e. blueberries. Small and tasty fruit, slightly sweet and slightly sour. They are most often made into jams, preserves, juices and liqueurs. In season, fresh fruit is an ingredient of the most delicious buns in the world, i.e. the famous blueberry pies. Recently, there is a competition about who will fill the bun with the most berries. We can race or freeze some of the berries and enjoy their taste all year round. We can add frozen berries to dumplings, sweet pastries or to cocktails.

Do you know this device? It is a "grinder" for picking berries, also known as a comb. Do I pick blueberries this way? Not! Picking berries by hand is ecologically and socially correct. Blueberry fruits should be picked by hand, because we destroy or damage plants by unskillful use of similar devices. The berry picker in the photo is very, very old. I bought it once, I bought a decoration at a flea market in Austria. There you can use such devices, but with some reservations. Such a comb should only be used superficially and very delicately so as not to damage the berry and not to pick up all the berries. Something should be left for other collectors and animals.

I prepared two blueberry tinctures last season. One with a very simple composition: blueberries, alcohol, honey and the other on sugar with spices and lemon juice. After pouring the tinctures into the bottles, I put the tinctures in the cellar for a year. The taste of both tinctures was delicious, but the spices tincture definitely won.

INGREDIENTS
- 500 g of black forest berries
- 200 g of cane or white sugar
- juice of 1 lemon
- seeds from 1-2 capsules of cardamom or a good pinch of ground cardamom
- 2 cloves
- 3 peppercorns
- 1 almond
- 500 ml 70% tincture alcohol < / ul>
- Sprinkle the cleaned berries with sugar in a large jar or a gander and set aside for 1 day.
- Crush the cardamom seeds, cloves and pepper slightly in a mortar, add the almond and crush it with a mortar pestle. li>
- On the second day, the berries with sugar are mixed with spices, lemon juice and alcohol.
- Stir, close the jar and set aside at room temperature for 2-3 months.
- It is worth shaking the jar from time to time.
- After 2 - 3 months, pour the liquid from the fruit, preferably through gauze, pour it into the bottles and leave it in a dark and cold place for at least 3 months.
