Fucki with beetroot and sauerkraut in the-vegetable-version
Fuczki, or Ukrainian or Bieszczady pancakes, according to a classic recipe, you prepare sauerkraut. However, there is nothing to prevent this recipe from modifying a bit - to add something, to take something, replace something.
I found such a recipe in the book by Dominika Wójciak " Jednogarnkowa Jarzynova ". Dominika gives a recipe for fuchs based on, among others, chickpea flour and raw beetroot. My version will be with baked beetroot (this is what it was at home), wholemeal spelled flour and egg.

INGREDIENTS
FUCKLES
100 g of wholegrain spelled flour or other
2 - 3 tablespoons of yeast flakes
1/2 teaspoon of salt
1 egg
1/2 caraway seeds whole or lightly crushed in a mortar
a pinch of chili or as much as you like
3 tablespoons of olive oil
100 g of sauerkraut
100 g beetroot - baked for me, but it can be raw or pickled
oil or clarified butter for frying
TO BE GIVEN
200 ml of thick yogurt or creme fraiche
1 small clove of garlic
1 tablespoon of lemon juice
olive oil or chili oil
marinated onions - I recommend the recipe for red onion marinated in wine vinegar , honey and spices
greens - dill, chives, spinach or kale
PERFORMANCE

Pour flour, yeast flakes, spices, olive oil and egg into a bowl. Stir - we should get a slightly thicker dough than for pancakes - let it stand for about 15 minutes. Then add the squeezed and chopped cabbage and the peeled and coarse-mesh beetroot and mix.
Put the dough portions with a spoon on the hot fat, slightly flatten them, like pancakes. Fry on both sides until they are browned. Drain off excess fat on a paper towel. While the rest of the pancakes are fried, they can be kept in an oven preheated to 160 ° C.
TO BE GIVEN
Garlic is grated or squeezed through a press, mixed with salt and lemon juice. Let the garlic soften for 5 minutes, then add it to the yoghurt together with 2 tablespoons of olive oil.
Pancakes taste best warm, served with yoghurt sauce, sprinkled with greens and, for example, slightly crushed coriander or black cumin seeds. A perfect addition will also be a pickled red onion.
