Christmas gingerbread trees
The time has come for gingerbread and gingerbread. For many of us, it has been maturing in the refrigerator for a month now gingerbread cake strong which can also be used to bake gingerbread cookies. However, those who did not manage to set a long-ripening dough should not worry, because the weekly dough also produces delicious gingerbreads.

In this recipe, I used buckwheat honey because I wanted my gingerbread to have a distinctive flavor. You can add other honey, but I recommend trying it with buckwheat, you will surely like it.
Ingredients
250 g of buckwheat honey
125 g of butter
100 ml of dark beer
20 g cocoa
2 eggs
100 g of sugar
250 g of wheat flour, type 500
250 g of rye flour type 720
a pinch of salt
1.5 teaspoons of baking soda
20 g gingerbread spices - preferably homemade
Execution
In a pot, simmer honey and butter. Stir all the time, when everything dissolves, add cocoa and stir. Add the beer, stir, when the ingredients combine, take the pot off the heat and cool it down.
Sift the flour, baking soda and gingerbread spice into a bowl, add salt and mix.
Grind the eggs with sugar, then add the cooled mass of honey, butter, beer and cocoa. Rub further and gradually add flour, baking soda and gingerbread spice. The mass will be thick, so I recommend mashing it in a blender, food processor with a butterfly-shaped tip / stirrer.
Put the finished dough into a glass container or bowl, close it tightly and leave it in a cool place for 1 - 6 weeks, depending on how long we have.
Roll out the dough on a slightly dusted board to a thickness of about 2-3 mm. We cut out Christmas trees or other Christmas shapes and put them on a baking sheet lined with baking paper. Bake for 10 - 12 minutes at 170 ° C.
We store ready-made cookies in a closed container, they are matured in jars here. We can cover them with chocolate, frosting and decorating with various sprinkles.
