In German houses, stollen are often prepared according to old family recipes, thanks to which the dough takes on many faces. This is also the case in this recipe, I present a mini version of this Christmas baking, i.e. a mini stollen. Quick, easy, a lot (about 20 pieces) and just like gingerbread, we can pack it nicely and give our friends.
Ingredients on about 20 pieces
300 g of flour type 500/550
2 teaspoons of baking powder
1/2 teaspoon of cinnamon powder
pinch of powdered cardamom
50 g of sugar
100 g of butter
150 g of semi-skimmed cottage cheese
75 g of marzipan (I suggest homemade mass marzipanowa )
75 g of raisins
50 g of candied orange peel
20 ml of rum
a few drops of almond flavor
30 g of melted butter for spreading biscuits
powdered sugar to sprinkle
Pour the raisins and orange peel with rum, add a few drops of almond aroma and set aside (you can soak the day before).
In a large bowl, mix dry ingredients, flour, baking powder, cinnamon, cardamom, and sugar. Put it into a blender, add crushed cottage cheese and cut into pieces cold butter. Briefly, pulsating mix until we get the so-called "wet sand". Put the mixture back into the bowl or directly on the board. We add beaten egg, knead for a while. Crumble or cut the marzipan into small pieces pieces. Add the soaked raisins and orange peel to the dough, crushed Marzipan and knead again.
Tear pieces of dough from the dough (about 40 g each) and in form small, oval rolls with your hands. We put them on a lined baking tray baking paper and bake in an oven preheated to 180 ° C for 12-15 minutes. While still hot, spread with melted butter and sprinkle powdered sugar.
