Still a small patent, so that the avocados do not fall over, which may leak out the yolk, it is best to bake them on a muffin tray upside down. Place the avocado halves between the convexities, check the stability and put into the oven.
Ingredients for 2 people
1 large avocado
2 slices of smoked salmon
1 shallot or a small red onion
100 - 150 g salad mix
2 tablespoons of olive oil
2 tablespoons of lime juice
1/2 teaspoon of mustard
1/2 teaspoon of honey
Cut the avocados in half and remove the stone. If the hollow of the stone is too small, gently enlarge it with a spoon. In each half, cover the recess with a slice of salmon, forming a well, into which we gently put the yolk. Put them in the oven preheated to 200 ° C for about 12 - 15 minutes.
Wash and dry the lettuces, peel the onions and cut them thinly into slices, put them on plates. Prepare a sauce with olive oil, mustard, honey and lime juice. Season with salt and pepper.
Put the baked avocado on the lettuces and pour the sauce over it. Serve the avocados warm.
