Delicious, refreshing and healthy salad: oranges, chicory, shallots and cheese
This salad is a real explosion of flavors - bitter and tart chicory, intense sweet-sour-bitter red oranges, spicy shallots and a sheep's roquefort with a strong salty taste, here it happens...

Chicory is a plant whose leaves are characterized by a bitter and tart taste. This bitter aftertaste can be reduced by soaking the chicory in water before serving. However, we do not soak the chicory. It is said that a bitter taste is the key to better health as bitter foods stimulate digestion.
Ingredients for two servings
2 - 3 heads of chicory - about 200 g
1 tablespoon of lemon juice
1 small shallot
2 red oranges
25 g Roquefort cheese
parsley for decoration
1 tablespoon of orange juice (pressed from filleting residue)
1 tablespoon of olive oil
1 teaspoon of honey
Mix the sauce ingredients together, season with salt and pepper
Clean chicory of wilted leaves, cut out bitter scapes. Put a few leaves aside for decoration, and cut the rest of the chicory into thin strips. Put the chopped chicory into bowls and sprinkle with lemon juice.
Peel the oranges and fillets.
To fillet an orange well, it is enough to peel it properly. With a sharp knife, cut off the top and bottom of the fruit so that the flesh is visible. Then place the orange vertically and cut the skin together with the white albedo. From the prepared fruit, use a sharp and thin knife to cut out the fillets from between the white membranes.
Add the fillets to the chicory, squeeze the juice out of the remaining orange with your hand.
Cut the peeled shallots into thin slices and add to the salad.
Sprinkle the salad with the sauce, sprinkle delicately with crushed roquefort cheese and chopped parsley. Cover with whole chicory leaves for decoration.
