20 g of almonds (I used roasted salted ones)
30 g sun-dried tomatoes in oil
1 tablespoon of capers
2 + 1 tablespoons of lime juice
2 tablespoons of olive oil
3 tablespoons chopped parsley leaves
Toast the almonds in a dry frying pan, lightly salt, let cool -
if you have ready roasted salted almonds, skip this step. Chop the cooled almonds coarsely
Peel the avocado, remove the pit, cut the pulp into pieces and Sprinkle with lemon juice (1 tbsp).
Drain the sun-dried tomatoes from the brine, cut into strips or cubes.
Mix 2 tablespoons of olive oil with 2 tablespoons of lime juice and chopped parsley parsley, salt, pepper.
Add dried almonds to the cooled quinoa tomatoes, capers, pour over the olive oil, lime and parsley sauce. mix thoroughly, taste and season with salt and pepper if necessary. Finally, add the avocado and mix very gently.
