Chutney, sweet spicy fruit sauce made of plums and apples - homemade preserves

Sweet and sour, fruity and spicy plum sauce. I made my chutney from plums, but we can use any other variety of plums.
INGREDIENTS
- 1 kg of plums
- 500 g of apples
- 250 g of red onions or shallots
- teaspoon of grated ginger
- 3 bay leaves
- 1 stick of cinnamon
- 1 teaspoon of allspice
- 1 teaspoon of gingerbread spice
- 200 g of red wine vinegar li>
- 300 g of cane sugar

PERFORMANCE
- Wash the plums, cut them in half and stone, then cut them into strips. Peel the apples, cut out the seed nests and dice them.
- Peel the onion and dice it as well.
- Put the chopped onion into a saucepan with a thick bottom, cover with sugar and caramelize over low heat.
- When the sugar has melted and the onion is soft, add the remaining ingredients.
- Simmer for about 30 - 45 minutes, stirring occasionally.
- Be careful that nothing gets burned.
- When the chutney is thick enough, take out the cinnamon stick and bay leaves.
- Remove from heat and fill the scalded jars with hot water, close them immediately.
- Chutney can be pasteurized in jars to be sure.
