Autumn pumpkin pancakes are very simple and quick to prepare. They are very similar to fuchki only that we turn the sauerkraut into a grated pumpkin.

The recipe for crispy pumpkin pancakes comes from the book " Pumpkin from the kitchen - 50 recipes for fall "


  • 400 g pumpkin - weight after peeling and pitted
  • 1 medium onion
  • 1 small clove of garlic
  • 1/2 teaspoon fresh ginger
  • 50 g of wheat flour
  • 1 egg
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of spices - I recommend the recipe for < a href = "https://tajemnicesmaku.pl/domowa-przyprawa-piernikowa-pachnaca-prawdziwa-najlepsza"> homemade gingerbread spice
  • frying oil


  1. Peeled and cleaned pumpkin (Hokkaido pumpkin does not need to be peeled) grate on a large mesh grater.
  2. Dice the onion and add to the grated pumpkin. Beat the egg with a fork and mix with finely grated garlic and ginger.
  3. Add salt, spices and flour to the egg mixture and combine with the pumpkin.
  4. we put the dough portions with a spoon, slightly flatten them, like pies.
  5. Fry on both sides until browned.
  6. Drain excess fat on a paper towel.
  7. The pancakes taste delicious hot, served with yoghurt and sprinkled with greens. If you like spicy dishes, I recommend adding dried or finely chopped fresh chili peppers to yogurt.
